    This report presents the findings of a Quality Audit of the fishing port of Brixham that examined the quality of raw material supplies to the port, standards of physical infrastructure, operating practices and management controls. The quality of fish supplied to the market is generally vry good although improvements could be made with regard to gutting and temperature control by day boats. The port suffers from major problems of lack of space, poor road access and inadequate infrastructure, partly as a consequence of its physical geography. The design and layout of the market and associated facilities were found to pose serious problems of operational efficiency, quality control and food safety that are compounded by the lack of agreed standards, procedures and controls.
