    Recipe Development of Six Cockle and Mussel dishes

    As part of its overall programme for expanding the market for under-utilised shellfish species, the White Fish Authority contracted a well-known shellfish processing company to undertake development work on new products based on cockles and mussels. This report outlines initial work carried out on seven products that, because they did not fit into the company’s marketing plan, were not taken beyond the recipe development stage.     Measurement of Cod End Handling Loads on 65-85m Stern Trawlers Engaged in Mackerel Handling

    Load measuring trials on the CORDELLA, a 70m stern trawler, took place during the 1979 – 80 mackerel fishing season. During the 6 day fishing operation, 10 hauls were made with a valid fishing time of 12 hours resulting in a total estimated catch of 294 ton. The maximum, recorded loads taken of both cod end inhauling and cod end tipping are 43 ton and 24 ton respectively. These loads together with the loads obtained on stern trawlers in the 35 – 45 m length range will help to advise the UK Mutual Insurance Co. of revised standards of working gear for these classes of vessel.     Further Acceptability Trials with Farmed Turbot

    Following on from the acceptability work carried out in London during the summer of 1974, further trials with farmed turbot from the Authority’s Marine Fish Cultivation Unit at Hunterston in Ayrshire, were conducted in different sections of the fish retail trade including wet fish wholesalers, a frozen fish processor and distributor, fishmongers, restaurants and hotels.     Mackerel Research - Omnibus survey of housewives 1976 1977 and 1978

    For the past three years, as part of its on-going programme of research into consumer and trade attitudes towards mackerel, the White Fish Authority has been commissioning quantitative research in the form of annual omnibus surveys in order to determine current usage of the species. The surveys were conducted in July 1976, September 1977 and September 1978. This report deals with the third of these surveys, and its findings are compared with the findings obtained in the two previous years. The information in the report has been summarised to the extent that certain tables have been omitted, but all the research information is available from the White fish Authority should it be required.     Rapid increases in mackerel landings during the last 3 years – to a point approaching 10% of the total UK catch – have not been matched by corresponding growth in the home market, with the result that this protein rich species is seriously under-utilised in terms of human consumption in the UK.     Interviews with Fish Friers Selling Blue Whiting & Customers

    This report, prepared on behalf of the White Fish Authority (WFA) by David Elliott & Associates, describes the reactions of five fish friers in Wigan, Peterborough and Chatteris (Cambridgeshire), and their customers to block filleted blue whiting. It is the third report covering interviews held with fish friers selling blue whiting, and their customers. The first two reports, issued as TR 137 and TR 146 in 1976, dealt with a situation where frozen block filleted blue whiting was supplied to members of the Executive Council of the National Federation of Fish Friers who had volunteered to sell the fish on the WFA’s behalf. Since these reports were issued, the WFA have continued to sell blue whiting on a low key, but regular and fully commercial basis to a number of outlets – some 30 friers have now tried the fish.     Consumer Acceptability of Farmed Turbot

    In June 1974 a marine cultivation trial with turbot, at Hunterston in Ayrshire was concluded, as the fish had attained an age of 3 years. The fish in the weight range 0.6 to 1.2kg were harvested and marketed through Grimsby, where they gained favourable comment. Further samples were used to gauge consumer reactions to the farmed product, over and above the very good reports of its eating quality from the authority’s own staff. It has been the Authority’s experience that the view of those with educated palettes often differ from the general public. The Authority therefore commissioned David Elliott and Associates to conduct a consumer survey, across a wide cross section of the fish eating population, to determine whether the farmed product was discernable from wild caught fish of approximately the same age since death and, if so, which was preferred and why.     Blue Whiting - A Country by Country Survey for Current Research Work and Commercial Activities

    In August 1976, a detailed questionnaire was sent to the fisheries research organisations and some commercial fishing companies in all countries know to be exploiting the blue whiting resource in the north-east Atlantic. The questionnaire asked specific questions about current research work (including exploratory fishing and processing trials) and commercial activities (areas fished, catch rates, etc). With one or two exceptions, however the response to date has been disappointing but since some interesting and (it is hoped) useful information has been received, this advance report has been compiled. The report will be reissued with further information should this become available over the next few months. It should be noted that this report is not an attempt to collate all the known information about the blue whiting contained in the literature, but to summarise, country-by-country, recent research work and commercial activities.     Over Wintering of Crassostrea gigas Seed at 8 Locations in the UK

    Pacific oyster seed of three size ranges were held in the sea over the winter of 1973/74 at eight locations around the UK. Survival and growth rates at each site were monitored at near monthly intervals. Survival of the smallest size (1.5 to 2.5mm) exceeded 75% at only two locations, both warmer than the other six, and fell below 30% at three locations. Surprisingly the two warmer locations produced poorer results with the medium sized seed (5 to 6mm), with survivals of 25 and 45%, compared to 30 to 50% at the cooler sites. Survivals with the large seed (10 to 12mm) at one warm and one cooler site were 86 and 80% respectively. Significant growth was recorded at only the two warmer locations, being about a 50 fold increase in weight in the heated water at Hinkley Generating Station and 5 to 7 fold at Guernsey. At the other sites growth did not exceed 85% and was zero for several. Until the reasons for the variability in survival of the smaller sizes of seed have been determined, commercial growers are advised to exercise great care if they attempt to overwinter in the sea seed of less than 10mm in size.     A Study to Forecast the Commercial Costs of Farming Turbot and Dover Sole

    The 1975 equivalent report (Technical Report 130) was based on research results obtained from the White Fish Authority’s (WFA) and the Ministry of Agriculture Fisheries and Food fish cultivation programmes. At that time, because, of course, industry’s involvement was not at the commercial stage, several of the important costing parameters had to be taken from fresh water trout farming. Predictions, however, were that such schemes were viable. Since 1975 the WFA’s Research and Development Programme has largely been directed to confirming the predictions and to establishing commercially appropriate costs. During the period, commercial participation has become more active, particularly with turbot.     Water Quality in Purification (Depuration) Systems. Guidance for Purification Plant Operators

    Only ‘clean seawater’ should be used in the depuration system. Cefas has issued advice on water quality in terms of turbidity and microbiology. The seawater used should carry no risk of contaminating the shellfish (including the risk from ‘harmful substances’ or toxic marine plankton). Further advice on issues relating to the statutory requirements for clean seawater and purification system operation is available by contacting Cefas.     Scallop Spat Collection Trials 1981/1982.

    The objectives of the 1981 and 1982 spat collection trials were to obtain further information on the type and deployment of collectors in order to maximise their efficiency. Peak settlement in 1981 occurred in early July for Pecten and Chlamys, with a maximum average yield of 605 and 649 spat per collector respectively. In 1982, the peak of settlement occurred in late June, possibly before the bulk of the collectors were placed in the sea and the maximum yield for Pecten and Chlamys per collector was 451 and 185 respectively. Initial trials using different collector materials were carried out to establish the most cost effective type of bag and filler. These trials will continue.     Fish Portion Sizes - Blue Whiting & Chip Shop Interviews

    In the absence of any up to date statistics regarding portion sizes of fish fillets sold in fish and chip shops, the White Fish Authority commissioned a national survey to interview fish friers. 734 fish friers were contacted by telephone during August, 1977, to determine the average portion size of their main selling species. In addition, they were asked questions about skin-on and skin-off fillets, purchases of wet and/or frozen fish, whether they had heard of Blue Whiting and whether they would consider selling it. The specific use of the research was to locate shops selling small portions of frozen, skin-on fish. Following are the results of the research expressed in terms of national finding with various regional distinctions highlighted when significant.
