Marine (Scotland) Act
This information note details the main provisions of the Marine (Scotland) Act. The Marine (Scotland) Act 2010 applies to the inshore area in Scotland, and to some functions in the Scottish offshore area. The powers in the Act complement the provisions of the UK Marine and Coastal Access Act 2009, which created new responsibilities for Scottish Ministers on marine planning and conservation in offshore waters outside 12 nautical miles (nm). A separate information note is available covering the Marine and Coastal Access Act 2009, which applies primarily to England and Wales, and in part to Scotland and Northern Ireland. -
Crustacea Processing Waste
With changes in waste legislation, shellfish waste management has become increasingly difficult and expensive. This has significantly affected the shellfish processing sector, particularly the crustacea sector as there is a lack of cost-effective outlets for their waste. Disposal costs of more than £60 per tonne are common, which is not economically viable for many businesses. To establish whether it is possible for UK processors to generate an income or reduce the costs of crustacea waste disposal, Seafish initiated a project to look at the range of options available for crustacea waste management and identify which have potential for the UK processing sector. The project looked at all the crustacea species processed in the UK and the range of products or extracts that can be produced. The project identified two main options for crustacea waste management; use or disposal as ‘waste’ off-site or making it available for use in other products. Each option has its own issues; legalities, technical feasibility, outlets for the products etc. On the basis of the information collected, it will continue to be difficult for the crustacea processing industry to cost-effectively meet the demands of waste disposal legislation for the foreseeable future. Many different routes have and are being explored, but no breakthrough technology or solution has emerged. There are some opportunities to generate a financial return from crustacea waste, but investments in capital and the requirements for effective management remain a significant hurdle to achieving a return on investment. There is no single, simple, cost-effective solution for crustacea waste management. This key features summarises the main findings of the project. A Scallop Cultch Ccocoon System, in Raasay Sound, Isle of Skye
King scallop cultivation depends upon two years of long-line culture to produce a 50mm shell height animal, large and robust enough to be re-laid in a fishery with a relatively high survival rate of 50-90% dependant on depth of seawater. It is proposed to develop and deploy a number of cultch filled habitats (six) in an area of Loch Sligachan in 18m of seawater then monitor for spat and predator settlement and survival. -

Appropriate Assessments Case Study 3_Mussel fishery in Carmarthen Bay
South Wales Sea Fisheries Committee (SWSFC) carried out a Test for Likely Significance (Preliminary Assessment) with regard to dredging for ephemeral sublittoral seed mussels in Carmarthen Bay in August and September 2005, with the dredging lasting for one week. This fishery activity would take place within the Carmarthen Bay and Estuaries Special Area of Conservation (SAC) site and the Carmarthen Bay Special Protected Areas (SPA). Key features of these sites were, respectively: large shallow inlets and bays and sandbanks slightly covered by seawater at all times; and the common scoter. Potential hazards to these features posed by the fishery included: The impact of both subtidal and intertidal dredge tracks. The disturbance of the top 10-15cm of substrate and creation of sediment plumes. Changes in benthic flora and fauna resulting from repeated dredging. Disturbance of common scoter ducks and removal of benthic prey. -
FS1-10 07-Fishboxes
Seafish has carried out trials to investigate the thermal properties of four types of non-reusable fish boxes for comparison (six kg or one stone capacity). These trials were carried out because it is important to keep fish as close to the temperature of melting ice as possible in order to maintain freshness quality. Fish boxes can help with temperature control as they help retain product integrity and offer some protection against changes in the ambient temperature. Over time, fish box designs and materials have changed and new products have been developed. The distribution chain has also seen changes, including the use of gel-ice packs and improved temperature control. This document summarises the results of those packaging trials, providing an overview of how the fish boxes perform under different conditions. This can help seafood businesses make informed choices about the type of packaging used. -

Effect of Bio-Mos on the growth and survival of cultured European lobster (Homarus gammarus)
In agricultural studies, Bio-Mos® (Mannan Oligosaccharide) has been shown to enhance the growth and survival of domestic livestock. Bio-Mos® does this by increasing the efficiency of the digestive tract, so improving food breakdown and nutrient uptake. Bio-Mos® is a prebiotic with immunostimulant properties which could potentially reduce bacterial diseases. Therefore, increasing survival in Homarid lobster culture. Objective The objective of this trial was to evaluate the use of Bio-Mos® as a dietary immunostimulant for improving European lobster culture. The two main aims were to; 1. Determine the effect of Bio-Mos® on the survival of larvae. 2. Determine the effect of feeding Bio-Mos® at the larval stage on the growth and survival during subsequent juvenile stages. -
B40 Abalone Culture in the UK - SAC Biotope Comparison
In 2002 South West Abalone Growers Association (SWAGA) was formed as a registered co-operative to help promote the sustainable and responsible development of ormer culture in the region. Since 2002 a number of the SWAGA members have conducted hatchery trials in Cornwall, Devon and Dorset. From 2003 a Networking Objective 1 project was undertaken by SWAGA with the support of a number of agencies to identify the limitations to the development of the industry. A number of environmental, technical, legislative and economic limitations were identified of which the SAC biotope comparison was a major consideration. -

Independent Fishmongers Study
In the summer of 2005, The Sea Fish Industry Authority (Seafish) commissioned research to examine the independent retail seafood market. This research sought to establish the true value share of this sector and understand how independent fishmongers have adapted in order to remain competitive. The findings show that the sector consists of a number of strong, thriving independent fishmongers and despite difficult trading conditions in recent times, many have carved a niche position within their locality. Seafood in general and specifically independent seafood retailers are in a strong position to capitalise on the well documented trend towards healthier lifestyles being pursued by consumers. -
Appropriate Assessments Case Study 4_Cockle dredging in the Solway
Cumbria Sea Fisheries Committee (CSFC) applied to open a cockle bed situated on a subtidal sandbank on the south side of the England/Scotland boundary line in the upper Solway Firth, close to an area known as North and Middle Banks. The proposal was to allow the removal by hydraulic suction dredging of a 410 tonne (25% of the stock) TAC of cockles above the CSFC minimum removal size from December 2005 to mid-April 2006. The maximum blade width of the dredge would not exceed one metre and the minimum bar spacing would be 20mm. The riddle drum was also subject to specification. The cockle bed fell within the Solway Firth Special Area of Conservation (SAC) site, which was designated for its estuaries, mudflats and sandflats that are not covered by seawater at low tide, and its sandbanks, which are slightly covered by seawater at all times; and within the Upper Solway Special Protected Area (SPA) and Ramsar Site, designated for its internationally important populations of regularly occurring Annex 1 species, assemblage of waterfowl, populations of regularly occurring migratory species, and over-wintering populations of migratory waterfowl. Suction dredging can potentially impact on sandbank features within these European marine sites (EMS). Given this, preliminary discussions with English Nature (EN) took place in October 2005 and it was agreed that the opening of the cockle bed would require an appropriate assessment under the Habitats Directive. To support the Appropriate Assessment findings, CSFC used a 2005 preliminary sublittoral survey conducted by Dr Jane Lancaster, a consultant marine biologist scientific to determine the extent of the proposed fishery. They also used a 15-year time-series of cockle stock data for the Solway Firth, which indicated a significant stock variation year on year. -

FS57-09.10_Guide to the use of Authorised Nutrition and Health Claims
The European Nutrition and Health Claims Regulation EC 1924/2006 (NHCR), came into force on 1 July 2007. It controls any nutrition, health and disease reduction claims made about a food. There was a transition period for the implementation of this Regulation. Officially, the list of nutrient claims permitted under the Regulation became effective on 19 January 2010, meaning that claims not on the Regulation annex are now illegal. The document has been produced to give guidance on the health and nutrition claims that have been approved, or are likely to be approved, and which may be useful in seafood promotion. It is intended as a guide to the rules and criteria related to making approved claims. -

Quality of trawled Nephrops using the coverless trawl
h by-catch is usually unmarketable due to small size, poor quality or lack of quota. With increasing pressure on limited resources the industry needs to maximise quality and reduce environmental costs. Recent trials have shown that the coverless trawl reduced the by-catch of whiting by 70%, reduced severe Nephrops damage by 18%, caught 10% more Nephrops and increased earnings. -
Creating New Markets for Coley
Coley is the second most abundant white fish species (by weight) landed into Scotland, yet the Scottish seafood industry has around 9,000 tonnes by-catch which at present does not have a home. This report will examine new markets for this product, to increase the value of this catch. -

Trials to Assess the Viability of Purifying Cockles - Three Phases of Trials Conducted between 1990-1992
There is a small but significant percentage of cockles sold live 'in shell' in the UK mainly in South Wales and the North West and also a very large market for live 'in shell' cockles in France and Spain. Unfortunately there is no history of cockle purification in the UK and no scientific evidence upon which the design and operation of a cockle purification system could be based. Therefore, Seafish considered it necessary to carry out investigative trials to assess the viability of purifying cockles. Subsequent re-analysis of the data in 2010 resulted in a change to the recommended time delay between harvesting and re-immersion and is included at the end of this report. This report details the trials work that was carried out to ascertain under what conditions cockles can be purified. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. In cases where this affects the technical content, a paper copy of the original report can still be obtained from Seafish. -

A Summary of a Packaging Audit of Billingsgate Fish Market
The producer responsibility obligations (packaging waste) regulations will require some large businesses to maintain detailed records of packaging handled and to be responsible for the recovery and recycling of some packaging waste. The Packaging (Essential Requirements) Regulations define certain design features that must be incorporated into all packaging in order to reduce its environmental impact. These will affect packer/fillers, brand owners and importers of products. Seafish contacted PIRA to review the impact of these sets of regulations on the fish industry, using Billingsgate as a case study. -

FS54 - February 2011 Weighing at Sea trials
A revision to an EU Control Regulation came into effect on 1 January 2010. An important part of the new Regulation concerns recording of fish weights and the permitted margin of tolerance it now stipulates between the logbook estimate and the actual landings declaration. The regulation allows 10 per cent for all fish stocks, from a previous margin of 20 per cent, for vessels over 10 metres. This regulation puts additional pressure on skippers to make accurate onboard assessments to within the new 10 per cent margin to avoid possible prosecution. This fact sheet summarises the results of a Seafish trial to test different weighing scales used at sea to help fishermen in their initial live weight assessment. B8_Uni of Wales_Hydrodredge
Scallop dredges typically use teeth or a cutting bar to dig through the sediment and are associated with detrimental impacts on marine benthos. A novel ‘Hydrodredge’ designed at the Massachusetts Institute of Technology (MIT) for use in the New England fishery for giant scallop Placopecten magellanicus has the potential to exert far less damaging effects on the seabed and its biota (Goudey, 2006). Instead of mechanical means, the new gear uses precisely oriented ‘cups’ that deflect water into a downward jet and creates large-scale vorticity, a combination that exerts sufficient force on the seabed to lift scallops into the water column whereupon they can be captured by the trailing net/chain bag. The results were encouraging, and led to a more thorough evaluation of the Hydrodredge in the Isle of Man fishery during August 2007, being the subject of this report. The crisis had erupted in 2009 after the Faeroe Islands withdrew from the mackerel management agreement in response to Iceland’s increasing mackerel catch. The level of autonomous quotas set by both Iceland and the Faeroe Islands during the period 2009 to 2013 was strongly challenged by both the EU and Norway. Appropriate Assessments Case Study 5_Shellfish cultivation in Shetland
An application was made to the Shetland Islands Council on 18 April 2005 to develop a new mariculture site for mussels, queen scallops and oysters. The site was located at the southern end of Uni Firth, adjacent to the mouth of The Vadills. Proposed equipment for this site were four double long-lines of 100m in length, with a surface works area of 8000m2 oriented east-west within a mooring area of 10,400m2. The application included no reference to any need to deter predation by eider ducks. The Vadills Special Area of Conservation (SAC) is made up of eight shallow basins, up to 5m deep. It was designated as an SAC by the Scottish Executive in March 2005 because of this ‘lagoon’ habitat. Listed under Annex 1 of the EC Habitats Directive and specified as a priority habitat in the UK, lagoons are expanses of shallow coastal saltwater, of varying salinity and water volume, wholly or partially separated from the sea by sandbanks, shingle or rocks. This priority status is granted to those habitats that are in danger of disappearing and there are both Priority Species and Priority Habitat Action Plans in place in the Vadills, taking account of their inherent and unique character and vulnerability. -

Appropriate Assessments Case Study 8_Cockle fishery in the Wash
An industry application was made in conjunction with Eastern Sea Fisheries Joint Committee (ESFJC) to open the Friskney Sand cockle bed to fishing by suction dredging, and to open all other cockle beds in the Wash fishery to hand working, with the dredge fishery quota (TAC) set at 2,500 tonnes. This was to start 1 July 2006, and the hand-worked fishery quota at 1,450 tonnes, to start 1 June 2006. ESFJC and English Nature (EN) agreed that the plan or project was likely to have significant effects on the European marine site (EMS), in particular because the proposed cockle quota represented a significant proportion of the Wash cockle stocks. Possible impacts on the EMS included: - Physical loss of the habitat. - Biological disturbance due to selective extraction of cockles. - Physical damage (abrasion) of sediments. - Disturbance to benthic communities. - Disturbance of common seals and birds by noise or visual presence. - Impact on birds of removal of prey species. -

Development and application of new rapid diagnostic methods for monitoring faecal contamination in coastal marine and freshwater environments
This project aimed at the development of a new method for the diagnostic detection and enumeration of Escherichia coli (used as indicator species for faecal contamination) in aquatic samples. The new method involved detection of E. coli using a molecular probe specific for E. coli, followed by quantification of the cell concentration by automated flow cytometry (AFC). Furthermore, a parallel study was planned to compare the results obtained from the new method with those from the current statutory microbiological method for E. coli enumeration (i.e. isolation of E. coli on selective media followed by colony counting). -

The catch quality from vessels landing daily should be of superior freshness to the catch from vessels fishing longer trips. However many small boats have very little onboard equipment to chill and hold their catch. This often leads to losses in catch quality despite the catch being only one day old and appearing very fresh. This fact sheet is aimed at vessels targeting white fish and squid (rather than Nephrops) and looks at the benefits of using alternative methods to chill and maintain temperature control using insulated tubs and ‘slush ice’. -

FS17_March 2010_IUCN Red List
The International Union for Conservation of Nature (IUCN) Red List of Threatened SpeciesTM provides an assessment of a species’ probability of extinction. There were approximately 45,000 assessed species on the 2008 IUCN Red List, of which 6% are marine species. The 15,000 marine fish species, habitat forming species such as sea grasses, mangroves and corals, as well as molluscs and echinoderms, are considered priorities for future assessment. This note uses the 2008 IUCN Red List to look at how species are evaluated under the IUCN assessment process, the criteria used and how the IUCN analysis compares to other fisheries assessments. -
Retail Overview 3rd Quarter 2010
Total seafood value fell -5% in Q3, principally driven by a -7% and -9% fall in the value and volume of Salmon, respectively. Caused by the aftermath of the ISA affecting Chilean supply earlier in the year. Compared to Q2, the value of chilled sector fell by -7% in Q3, with frozen and ambient falling by -1% and -4% respectively. Compared to Q3 2009, the value of the chilled sector is up +3%, with both frozen and ambient falling by -2%. These trends are in line with consumers switching to staples, as the consumer confidence index falls to its lowest level since Dec 2008. -

A prototype codend weigher was commissioned by Seafish to investigate the practicalities of using an electronic weighing device to assess the total catch of a vessel in the codend. Appropriate Assessments Case Study 1_Cockle fishery in the Solway
Cumbria Sea Fisheries Committee (CSFC) applied to allow the removal of cockles by hydraulic suction dredging and hand-gathering from the cockle bed situated at Beckfoot. The view of the CSFC was that significant impacts on the integrity of the area would be unlikely, particularly given the 2003 Fisheries Research Services (FRS) survey of grounds on the northern side of the Solway that showed a vast increase in total biomass in excess of 33,000 tonnes. -

They indicated that the plan or project was likely to have significant effects on: - Intertidal mudflats and sand flats within the Special Area of Conservation (SAC), Special Protected Area (SPA) and Ramsar sites should boats be used over the intertidal areas at or around high water. - The sub-tidal sediment communities sub-feature of the estuary feature for the following SAC estuaries – Yar Estuary, Beaulieu Estuary, Newtown Harbour Estuary and Kings Quay Estuary – and, in particular, any impacts upon the biological communities upon the tidal deltas at the mouths of these estuaries within the SAC boundary. - The ‘sub-tidal gravely sand and sand’ and ‘sub-tidal eelgrass Zostera marina beds’ sub-features of sub-tidal sand bank features. - Offsite impacts upon intertidal areas used by SPA birds below mean low water but above highest astronomical tides. - Possible disturbance caused by boats operating for prolonged periods close to intertidal areas used by SPA birds. -
Appropriate Assessments case Study 7_Mussel fishery in Morecambe Bay
An application was made to the North Western and North Wales Sea Fisheries Committee (NWNWSFC) to remove seed mussels from Heysham Flat Skear in Morecambe Bay. Due to the vulnerability of the juvenile mussels to loss through wind and tide action, the seed removal aimed to minimise stock mortality by removing up to 1,500 tonnes of small mussels by the end of November 2005. A site inspection was made by NWNWSFC, the applicant and other local fishermen. This revealed a considerable quantity of juvenile mussels on the eastern, inshore part of the bed. From the outset, the fishermen agreed to avoid an area of Sabellaria (honeycomb) reef that was vulnerable to vehicle and trampling damage. -

Anisakis is a marine parasitic worm (nematode) which is most commonly found in fresh water and anadromous fish, like wild salmon, which are born in fresh water, migrate to the ocean, then return to fresh water to reproduce. It is also common in certain small salt water fish, such as herrings and sardines. However, anisakis is rare in other salt water fish, such as tuna, swordfish and farm-raised salmon. Appropriate Assessments Case Study 9_Herring fishery in the Moray Firth
An application was made by the Fishermen’s Association Ltd. (FAL) to the Scottish Executive to reintroduce a seasonal herring fishery in the inner Moray Firth. This would be fished by under-10m vessels equipped with drift nets from October to March, within the line from Balintore to Burghead. This fishery would provide a valuable source of income for small boats, which are unable to fish very far afield during the winter months. -

Project 50 Per Cent_Cefas trials to reduce discards among Devon beam trawlers
Discarding is an important issue for the fishing industry. We need to find ways to reduce discard levels if we are to keep fish stocks in tact for future generations and develop a sustainable fishing industry. The aim of Project 50 Per Cent is to halve the level of discards from Devon beam trawlers. Beam trawler crews from Brixham and Plymouth have volunteered to work with Cefas over the coming months to experiment with changes to nets, designed to reduce discards. The changes may also help to increase profits by reducing chafing of fish giving higher market prices and reducing fuel consumption. -

Testing Materials used in Queen Scallop dredge Construction_IPF C100
The work aims to improve the durability, reduce the weight and environmental effects and minimize costs of Queen Scallop dredges by finding more durable and or cheaper materials for use in dredge component construction.Gear developments tested have included the use of rollers, skids and flexible rubber flappers to replace steel teeth normally used. This has been observed to reduce King Scallop (pecten maximus) by catch and stone retention in the dredges and also greatly reduces seabed impact compared with standard tooth dredges. FS6-11.08 Nov 2008 Fuel additives
As part of an integrated research programme looking at improving fuel efficiency for fishing vessels Seafish has tested eight diesel fuel additives for red diesel to assess manufacturer’s claims that their use leads to a reduction in fuel consumption. The results of the work indicate that there were no discernible improvements in fuel economy when using diesel fuel additives under test cell conditions. Only one additive showed a saving of around 1%. The other seven additives showed no significant effect on the fuel consumption of the test engine through the test cycle used. If the results from the tests are typical of real duty cycles, then the use of additives would increase operating costs for fisherman as they would have to pay for the additive as well as for the fuel. -

The development of a novel hatchery system for the Ormer Haliotis tuberculata
‘Pinkstones’ are natural stones covered with coralline algae which secrete a hard pink coloured calcium carbonate coating. The relationship between the coralline alga Lithothamnion sp. and the settlement of abalone has been noted previously, but not seemingly exploited at a commercial level. Heasman reports that in the case of H. rubra not only does the production of GABA (gamma amino butyric acid) play a significant role in mirroring neurotransmitters involved in metamorphosis from the free swimming planktonic stage to the post-larval settlement stage, but the ‘antifouling cells’ used to keep the surface of the alga clean are of the right size to provide initial nutrition before the larger diatoms can be consumed. If this is linked to the reporting that 1 litre of ‘pinkstones’ can accommodate up to 60,000 post larval abalone and they can survive and grow over the following 8-10 days before selectively migrating, largest first, then they can become vector stones with the potential for commercial exploitation. This project was designed to establish if this was the case with Ormers and if so how to utilise the process to advance the aquaculture of the species. -

FS18-12.08 Dec 2008 Fuel Flow Meters
This work investigated the accuracy and precision of fuel flow meters that may be used on commercial fishing vessels to give real-time indication of engine fuel economy during operations. The study looked into the most accurate way to meter fuel consumption on a commercial fishing vessel, the cost of this to fishermen, how straightforward the device would be to fit on a fishing vessel and whether the sensors are suited to the demanding environmental conditions onboard fishing vessels. Looking at six different meters the study concluded the best all round performer was the oval gear positive displacement meter, the Flowtech Oval MIII. When the temperature increase in the return fuel line is significant and the cost can be justified by the rating of the engine, Coriollis mass flow rate meters should provide accurate and repeatable fuel consumption figures. -
Response to Consultation on Scotland’s National Marine Plan: Pre-Consultation Draft
Seafish welcomes several of the proposals in the draft plan, such as making sustainability a main aim and proposing to plan inshore and offshore areas together. However the draft contains several issues of concern. These include a disjoint between Marine Strategy Framework Directive and the Common Fisheries Policy; shellfish farming in the context of water quality; the intention to use the terrestrial model as a basis for marine planning; the absence of policy priorities; and the absence of temporal planning as a possible planning tool. -

FS09_06.09 High pressure processing of fish and shellfish
Seafish, FIFG and Norconserv funded a comprehensive series of trials to determine the practical and commercial benefits of using High Pressure Processing (HPP) for seafood processing. The work was carried out on a range of fish and shellfish by Campden BRI, using both pilot and commercial scale equipment. Where appropriate, samples were assessed and further processed by seafood industry partners. This factsheet summarises the findings of the work. -
Codend Weigher Report
To assist in reducing the current levels of discarding within fisheries, there is a requirement to more accurately assess current discard levels. The concept of designing a device to weigh the codend of a net including its contents arose from this need to better quantify the discarded element of the catch. The cod end weigher was designed to measure the total weight of the codend as it is hauled aboard the vessel, weights are sent remotely by radio signal to a computer situated in the wheelhouse. The weigher is designed to compensate for the motion of the vessel so accurate weights can be recorded. -

It is becoming increasingly important that vessels fishing inshore have a way to provide evidence that they are complying with local voluntary and statutory environmental management agreements. Seafish was approached by the South West Fishermen’s Association (SWIFA) to look at inshore vessel monitoring systems for scallop vessels working in Lyme Bay. This fact sheet summarises pilot trials on two different types of system fitted on five vessels fishing from various ports in South West England. -

For the last five years, Simpson’s Seafish has been exporting frozen smoked cod and coley to Brazil in bulk. Exports have averaged £175,000 per annum but that is changing thanks to a chance visit to a Brazilian supermarket. With support from Seafish and advice on funding opportunities, Simpson’s anticipates a three-fold increase in export sales. This case study details the collaboration between Seafish and Simpson's which has helped to make this happen. Simpson's works with Julie Snowden and with the marketing and R&D departments at Seafish. -

Size-price dependency in the market for whitefish
Seafish analysed data on sales of cod and haddock at Peterhead auction between 2006 and 2015 to estimate how much fish size influenced price at auction. Further analysis was done to estimate how a lower average size of landed fish could impact fishing revenues. The study found strong evidence of size-dependent pricing for both species and estimated that if selectivity is not improved, fishermen operating whitefish vessels could earn £21,000 less in gross annual fishing income from cod and haddock landings, compared to pre-landing obligation fishing revenues. The study suggests that if selectivity is improved, fishermen could achieve a higher overall value for their landings than if they land the same proportion of small fish that they were catching before the landing obligation was implemented. -

FS10_06.09 Can pulsed light extend the shelf life of seafood?
Pulsed light is an emerging technology which has the potential to improve the safety and extend shelf life of seafood by killing micro organisms. Trials were carried out Campden BRI, funded by the Seafish Industry Project Fund (IPF) to determine any commercial benefits on a range of fish and shellfish. The equipment generates very high-intensity pulses of short wavelength light, similar to that of UV light, which kills micro organisms by disrupting their DNA replication. It has the advantage of having a relatively low capital cost, and does not leave any obvious chemical residues on the food. The disadvantage is that the light cannot penetrate far into the flesh, so its effectiveness is limited to a surface treatment. As fish spoilage micro organisms quickly penetrate the muscle blocks, it is unlikely to have a significant effect in slowing the overall spoilage of fish. -

Seafish agrees that substantial change in the operation of fishery management is required in order to achieve sustainable, profitable fisheries. The system therefore has to include incentives to private individuals and should provide long-term rights to them. Property rights should be permanent (or rolling long term), tradable, exclusive and clearly defined. -

Voids are undesirable because they affect the final weight and appearance of a portion produced from the block. Guidance sheet – New Labelling Rules for food sold loose and food service
From 12 December 2014 the EU Food Information to Consumers Regulation will require allergen information to be given with food sold loose or pre-packed on the premises. This will include fish mongers and catering establishments. There is a legal requirement to inform the consumer as to the presence of 14 allergens: Milk Eggs Fish Crustaceans (e.g. crab, lobster, crayfish, shrimp, prawn) Molluscs (e.g. mussels, oysters, squid) Peanuts Tree nuts (almonds, hazelnuts, walnuts, cashews, pecans, Brazils, pistachios) Sesame seeds Cereals containing gluten (i.e. wheat (such as spelt and Khorasan wheat), rye, barley, oats, or their hybridised strains) Soybeans Celery and celeriac Mustard Lupin Sulphites at concentration of ten parts per million and above -
Crustacea processing waste management
With changes in waste legislation, shellfish waste management has become increasingly difficult and expensive. This has significantly affected the shellfish processing sector, particularly the crustacea sector as there is a lack of cost-effective outlets for their waste. Disposal costs of £60 to 300 per tonne are common, which is not economically viable for many businesses. To establish whether it is possible for UK processors to generate an income or reduce the costs of crustacea waste disposal, Seafish initiated a project to look at the range of options available for crustacea waste management and identify which have potential for success. The project looked at all the crustacea species processed in the UK and the range of products or extracts that can be produced. This document summarises the findings of this work. -

Brown Crab export market
In 2004 the Sea Fish Industry Authority (Seafi sh) commissioned a research study with the purpose of exploring export markets for value added products (VAP) based on brown crab Cancer pagurus. The brown crab business is changing as demand for whole live crab is declining, in favour of pre-processed products. One of the primary objectives of this study was to identify the key European markets and monitor trends. Today cooking and peeling is done either by crab processing specialists, in supermarkets (cooking done in shops) or by restaurant chefs. Transporting and especially packing are done all along the brown crab value chain. The market is moving drastically from traditional live to fresh cooked and packed cooked meat which is ready-to-eat. -

The mussel bed was widely accepted as ephemeral and, as it was both unstable and exposed, the stock was very susceptible to strong onshore winds and extreme tidal currents. In some years this has resulted in virtually all the stock of young mussels at Beckfoot being washed away within 6-8 weeks. -

FS26_06.09 Maximising Profits in Shellfish Cooking Using Time Temperature Indicators (TTI’s)
Cooking is the traditional process by which many foods are made safe before they are eaten. Heating to a sufficiently high temperature destroys any harmful micro-organisms that may be present. Cooking may be required by law or used to facilitate shelling or shucking. Cooking may also be used to produce desirable ready to eat products with a longer storage life, by inactivating spoilage enzymes and bacteria naturally present on the raw material. Time Temperature Indicators (TTI’s) are emerging as a more efficient and cost effective way to measure the degree of cooking received by the product. The Seafish Industry Project Fund (IPF) funded Campden BRI to investigate and develop suitable TTI’s for the continuous cooking processes, such those used to cook crab and prawns. -
Food Information Regulation: Update on Compromise Agreement (Amendment 136)
The new Food Information Regulation being discussed is intended to consolidate all the amendments made to the current Food Labelling Regulation and modernise it, as well as ensure greater consistency of rules between Member States. This Guidance Note lists the main changes this new Food Information Regulation will make to current food labelling rules in the UK. Only the changes likely to affect seafood businesses are included: definitions, legibility, responsibilities, mandatory and voluntary particulars, distance selling, allergen information, date of freezing, presentation, added water. -

Seafish, in collaboration with the Food Standards Agency, industry and enforcement representatives, has produced a number of hygiene checklists and associated documents for checking whether fishing vessels comply with minimum hygiene requirements. -
Determination of Appropriate Conditions for the Depuration of Razor Clams
Trials carried out to determine appropriate conditions for the depuration of razor clams have found that, providing diver-gathered animals are banded and re-immersed soon after capture and kept banded during the depuration process, significant removal of E.coli can be achieved from shellfish artificially contaminated with primary sewage effluent. Shellfish contaminated to class C levels of E.coli achieved significant clearance of E.coli after 42 hours at 10 degrees centigrade and a salinity of 30% and with a shellfish to water ratio of 1:4 (w/w).
