    A Report on the Packaging of Gigas Oysters

    During the present century, consumption of oysters has declined acutely. They have been known in Britain since pre-Roman times, and whereas in Victorian times they were the food of the poor, they are now a scarce, expensive luxury. Yet they breed prolifically. Now the White Fish Authority plan to promote the cultivation of the gigas oyster in a number of oyster farms around the coast, and, side by side with growing, they are setting up a marketing operation to encourage the wider use of oysters by caterers and domestically. One prerequisite is effective, inexpensive packaging. We have, therefore, consulted growers and caterers (see appendix) about their views. Our conclusions on the packaging of both shucked and processed oyster meats will, we believe, be found acceptable to growers and caterers.     Distribution, Abundance and Availability of Blue Whiting in the North East Atlantic

    Results of surveys carried out over the last few years indicate that there is a stock of at least several million tonnes of blue whiting in the North-East Atlantic. The only known spawning area of blue whiting is to the West of the British Isles. In this area, the adult fish are concentrated during the late winter and spring months but they then disperse, a major part of the population moving Northwards into the Norwegian Sea. They return to the spawning grounds probably via the Faroe-Shetland channel, around February. This report is a summary of material from various sources, including work published by the Marine laboratory and Torry Research Station Aberdeen.     Measurement of Cod and Handling Loads on 35-45m Stern Trawlers Engaged in Mackerel Fishing

    This report contains the results of investigations into the loads generated in the in-hauling and tipping tackles when hauling large pelagic catches of mackerel in two wet fish stern trawlers in the 35 – 45m length class. The purpose of the investigation was to obtain basic data to verify the directives of the UK Trawlers Mutual Insurance Company (Appendix I) on the design and testing of the various blocks and tackles used for handling the large catches occurring during the Mackerel fishing season. Details of trials procedures and equipment used during the investigation are given, with the results shown in tabular and graphical form. These results substantiate the directives of the UK Trawlers Mutual Insurance Company and highlight other facets of the net handling in this particular fishing operation.     Guidelines for the handling of chilled fish by retailers

    The Guidelines cover the technical aspects of fish purchase, handling and selling, and of premises, vehicles and equipment, and apply to the trades of the traditional fishmonger, the supermarket, the mobile van operator and the market stall operator. Necessary background information is given and detailed recommendations are made. The Guidelines cover chilled fish which has not been pre-packed for retail sale, including wet fish, smoked fish, cooked fish and shellfish. Guidelines for handling CAP fish, which differs in its handling requirements, are given separately in the Seafish Guidelines for the handling of fish packed in a controlled atmosphere. It is recommended that retailers handling other pre-packed fish, including vacuum packed and overwrapped fish, follow the CAP Guidelines.     Selectivity Trials of Seine Net Codends - MFV 'KESTREL' (INS 253) - April 1990

    This report describes the comparison between three different mesh sizes of cod end in order to assess selectivity criteria. The cod ends were 90 mm x 120 meshes, 90 mm x 100 meshes, 110 mm x 100 meshes. All were diamond mesh configurations. The results showed small increases in the L.50 characteristics but overall the discard rates for each cod end were comparable. The trials were carried out with and without a small mesh cod end cover.     Selectivity Trials with the Looe Pair Trawling Team of 'BUDDING ROSE' (LH134) and 'LEVAN-MOR' (FY269)

Experiments have been carried out in this fishery to see if these are dry benefits from the use of square mesh panels to reduce discards of hake, whiting and squid.     Turbot Hatchery Production 1982

    During 1982 the Ardtoe Hatchery of the Sea Fish Industry Authority transferred over 59,000 young fish to the weaning unit, the greatest number of turbot produced at Ardtoe in a single year. However, the season was marked by consistently low larval survivals, the high production being achieved by greatly increasing the number of batches handled (73 batches in 1982, 39 in 1981, 27 in 1980). A total of 1,472,000 larvae were stocked producing a survival of 78,600 (5.3%) at day twenty (d20) and 59,000 (4.0%) on transfer to weaning tanks. The survival to weaning compares with 5.3% in 1981 and 13% in 1980. There was a reduced dependence on eggs from other units in 1982, 54% of day one (d1) originating at Ardtoe compared with 18% in 1981 and 38% in 1980. There were also indications, for the first time, that larvae from Ardtoe produced eggs exhibited better eventual survival than those from other sources.     Summary Report into Oyster and Clam Purification Criteria

    During the period December 1991 to April 1992 Seafish carried out a series of trials to investigate the purification of native oysters (Ostrea edulis) and three commercial species of clam, hard shell (Mercenaria mercenaria), manila (Tapes philippinarum) and native (Tapes decussatus). Experimental purification tanks were used and relative activity levels at different seawater temperatures and mollusc densities assessed by visual observation, dissolved oxygen depletion, uptake of red dye and bacteriological analysis. The trials indicated that the current minimum seawater temperatures specified for the purification of native oysters and hard shell clams were too low whereas manila clams were active at much lower temperatures. Stacking native oysters four deep and manila and native clams in 130mm layers did not appear to cause any reduction in activity. The scope of the trials was limited as a result of difficulties in obtaining sufficiently polluted shellfish resulting in no positive bacteriological result. However, some recommendations are made. To assist in the approval of purification systems MAFF and Seafish have developed a technique for the artificial dosing of bivalve molluscs with the bacteria Esheria coil, so far used with mussels and pacific oysters. The opportunity was taken to use this technique during some of the trials. Native oysters were dosed satisfactorily but some difficulty was experienced with manila clams and a larger dose and longer immersion time were required.     Improved Selectivity in Demersal Trawl Gear

    This report describes work undertaken by Seafish under MAFF Commission MF0601. The work investigated how best to position mesh panels in Nephrops trawls to reduce the by-catch levels of white fish. The work was very much practically biased: sea trials were carried out under commercial conditions and took into account problems associated with fishermen’s acceptance of gear innovations. Principal among these was any loss of marketable catch. The trials vessel MFV Heather Sprig operated a twin trawl system. One trawl was rigged with a conventionally sited square mesh panel and three variants were fished against that trawl. Ten days of sea trials were undertaken.     The Mechanical Discharge of Wet Fish Trawlers at Tidal Ports

    This report describes trials held between 1973 and 1975 of a new method of discharging wet fish trawlers at a tidal port, in this case Aberdeen. The principle was that of a vertical lift from a high speed winch discharging on a boom conveyor cantilevered from the quay with the whole unit being independent of the vessel. This technique was unaffected by tidal variations during the landing period. The prototype equipment functioned well and was easily operated by the fish porters and could increase productivity by around 20%. Because of the recession in landings at Aberdeen the system was not subsequently adopted. However, as the equipment is versatile in its ability to discharge wet fish vessels from 20m upwards at all quaysides with sufficient headroom whether tidal or gated and with vessels moored bow in or alongside, recommendations for future commercial development was given.     Deep Water Fishing Voyage, MT 'Luneda', Feb 74

    The wet fish stern trawler LUNEDA (J. Marr and Sons, Fleetwood) was chartered by the White fish authority on behalf of the Ministry of Agriculture, Fisheries and Food for a 14 day voyage in February 1974. The purpose of the voyage was to make a start upon the assessment of the commercial viability of the stocks of deep water fish, especially grenadiers, which had been found in depths between 400 and 700 fathoms in surveys in 1973. During the voyage only 8 days fishing were possible because of bad weather conditions but the vessel nevertheless landed 680, ten stone kits of various species. The proportion of grenadiers landed (27% of the catch) was lower than anticipated from the earlier surveys but this was more than compensated for by a high catch (329 kits) of blue ling, which was not expected at these depths in these quantities. In the late 1990’s and early 2000’s, changes in the charging scheme for trade effluent discharge resulted in a significant rise in costs across the whole of the seafood processing industry.     Experimental Fishing Using Fish Traps

    The report describes fishing trials undertaken by Seafish under MAFF Commission MF0614. Six Neptune traps were fished over a 10 day period around Flamborough Head. They were set on wrecks and rough ground unsuitable for trawling. Fish catches were generally low, probably because of tidal and similar influences. Lessons learned will be useful in the design of a further scheduled study.

    Factors Affecting E. Coli Levels in Shellfish with Reference to EEC Directive 91/492

    The contamination of bivalve molluscs by viral pathogens is of concern to Public Health Authorities and the shellfish industry because of the potential health risks and loss of markets for bivalve molluscs. As part of the Single European Market (SEM) the European Commission has introduced a Directive (91/492/EEC) which requires shellfish harvesting waters to be classified according to their levels of bacterial contamination; faecal coliforms or Escherichia coli as assessed by a 5 tube 3 dilution Most Probable Numbers test found in the shellfish collected from those waters. The intention is that bivalve molluscs which originate from areas of bacterial contamination shall undergo depuration or, if contamination is found to be severe, prolonged relaying, in order to ensure viral safety. Before the EEC Directive can be implemented it is necessary to design sampling protocols which would result in consistent classification of shellfish growing waters. This project is intended to examine the variables which could affect E. Coli levels in shellfish surveys and to design means by which bias resulting from these variables could be overcome.     Improvement of Selectivity of Trawl Codends

    This report describes trials by Seafish Technology into the selective characteristics of codends of three different mesh sizes; these were, nominally, 100, 110 and 120mm. The work was undertaken for MAFF’s Chief Scientist’s Group under their project reference MF0601. The fishing trials were conducted on a chartered vessel MFV Heather Sprig, mainly in the Moray Firth, and targeting haddock, whiting and cod. The experiments used the covered codend technique and also measured essential gear performance parameters by use of a Scanmar package. Selection curves were calculated from the ratio of total fish caught against those only in the codend. Problems were encountered in two respects. First the numbers of cod caught were very low and little significance can be attributed to that data set. Secondly, very large numbers of small haddock and whiting were encountered and there is a need for some caution in interpreting the date because of this.     Evaluation and improvement of shellfish dredge design and fishing effort in relation to technical conservation measures and environmental impact: ECODREDGE FAIR CT98-4465;

    This file provides access to the reports produced during the ECODREDGE project. This project systematically examines the bivalve dredging process and its physiological and ecological consequences. The literature on ecology and population dynamics of the target species, dredge design and fisheries and the environmental effects of dredging and selectivity of dredging is reviewed. A programme of experimental work, both laboratory and field studies is described in scallop and clam dredge fisheries in European waters; scallop species (UK, France) Pecten maximus, Aequipecten opercularis, clam species (Italy; N. Adriatic) Chamelea gallina, clam species (Portugal) Spisula solida, Donax trunculus, Callista chione. Selectivity measures and dredge design are examined for their consequences in terms of environmental effects. Studies included physical, chemical and biological effects both at individual and community level, and selectivity of dredging. These studies include the use of instrumentation and modelling to describe physical effects and behavioural observations, stress and damage indices, both acute and chronic, to describe environmental effects.In the discussion measurement of environmental effects and selectivity are discussed along with the environmental effects of selectivity parameters, dredge designs and responses to fishing effort.     Work Measurement on Fish Processing Operations in Aberdeen

    This project has been carried out at the request of the Aberdeen Fishcurers and Merchants’ Association in order to provide realistic labour costs of processing the principal species handled in the port of Aberdeen. The task has consisted of establishing the time taken for the most common production operations, or to use Work Study terminology, of “measuring the work content” of these operations. This Work measurement has thus provided a basis, independent of fluctuations in rate of pay, which can be used to calculate labour costs of such operations as hand and machine filleting. The data gathered can also be of value to firms for production planning as well as costs and it is proposed to make this information available to interested firms in the form of ready reference tables.     Exploratory Voyage for Blue Whiting, 'St. Benedict' April 1974

    This report describes a charter voyage of the freezer trawler St. Benedict (Thomas Hamling, Hull) carried out by the White fish authority in March/April 1974 on behalf of the Ministry of Agriculture, Fisheries and Food. The objectives of the voyage were to bring back a sufficient quantity of blue whiting, preserved to optimum standards, to facilitate development of processing machinery and methods for this species and to obtain trade reactions to it. To obtain a working knowledge of methods of detection and capture of this particular species and to carry out work programmes devised by the Marine Laboratories and Torry Research Station, related to fish population analysis and methods of preservation.     Fish In Cook-Freeze System of Catering

    This report is concerned with the development of fish dishes for the cook/freeze system of catering. The development work was carried out by the White fish Authority, in conjunction with the University of Leeds Catering Research Unit who were principally responsible for much of the original development of the cook/freeze system for institutional caterers. Twelve fish recipes, suitable for institutional catering, were modified or adapted to the system and some of them were subjected to acceptability tests in schools and hospitals. The results show that fish dishes, including fish which is coated in batter and fried, can be successfully incorporated in a cook/freeze catering system, with no impairment in quality or acceptability.     Appraisal of Alfa-Lavel Centriflow Fish Liver Oil Plant

    The objects of the projects were to assess the performance of the Alfa-Laval Centriflow fish liver oil plant in the production of fish oil from the discharge effluent of the vessel’s Shetland Type 28 gutting machine; and the production of a high quality liver oil from whole livers taken from hand gutted fish. During the time the plant was in operation aboard the stern trawler ‘MARBELLA’ it proved itself captable of producing a yield of fish oil from the gutting machine effluent of comparable proportion to the yield of fish liver oil from the same weight of whole fish processed traditionally.     'Plate Sized' Farmed Turbot in Five Restaurants at the 1976 Argyle Seafood Festival

    Farmed turbot weighing approximately 500-550g each were served at five restaurants, during the Argyll Seafood Festival in early July 1976, and were also displayed wet at the gala at Crinan. The trial confirmed that this is the optimum size for serving farmed turbot as a plat-size single portion, as they were well received by the management of the restaurants, the chefs and customers alike. Larger fish, about 900g in weight and suitable for serving two portions, were not so well received, as they were not so easy to handle in the kitchen.     Assessment of a novel system for restraining claws of the brown crab

    In September ‘97 a shellfish merchant purchased a novel system for banding the claws of the brown crab, Cancer pagurus. The banding system had been developed by the North Atlantic Fisheries College (NAFC), in Shetland, who have been conducting research into novel methods of restraining the claws of brown crab, primarily with a view to airfreighting product to foreign markets. The equipment, Fig 2, Appendix 1, is currently manufactured by HNP Engineers (Shetland) and has been marketed since early 1997. Seafish were requested to assist in investigating the suitability of the system for a crab fishery located off the East coast of England. The main interest was the efficacy of the bands on crabs which were subjected to medium term immersed storage in live holding tanks. Previous research by Seafish on restraints for brown crab is described in Seafish report No. 423. The work involved evaluating different designs of restraint in specialised conditions, with the aim of producing a design suitable for the U.K. vivier trade.

    Hall Test Research on Blue Whiting

    A series of Hall Tests were held in 3 locations (Greater London, Leeds and Walsall) in February/March 1976 using Blue Whiting caught by the MAFF freezer trawler Artic Privateer in 1975. Although it was an exploratory voyage, the fish were caught under commercial conditions and did not represent the pride of an outstanding catch. The fish reflected simply the best quality obtainable from an average catch at that time of the year. For each Hall Test approximately 200 housewives were served samples of hand filleted Blue Whiting crumbed and pan fried and grilled the order of presentation was rotated, and responses to the appearance, flavour and texture of the fish were recorded.     A second series of Hall Tests were held in a further 3 locations (Bristol, Glasgow, Manchester) in July 1976 using Blue Whiting from the Hebridean and Shemara catches of spring 1976. Because the fish were landed chilled, the resulting fillets were considered to be of sufficient quality to allow them to be displayed raw. For each Hall Test approximately 200 housewives were shown raw fillets and then tasted two samples – one crumbed and pan fried, the other grilled.     Initial trials with double rigged gear on a SW beam trawler in 1982 had demonstrated the feasibility of working this rig in UK waters. In 1983 trial fishing was carried out successfully on Celtic Sea nephrops (prawn) stocks. Increased catch rates in comparison with single trawl rigs were recorded and gear handling was further refined. Problems highlighted included the shorting effort required with increased catches of prawn and limited market in the SW.     Comparison of Results in Dover Sole Research and Development to November 1978 with Previous Performance Forecasts 1975 & 1977

    Degritting of King Scallops

    Dredged scallops are known to contain ‘grit’ in the form of sand, silt, mud or broken shell. Although washed out in processing, this contamination limits the marketability of these scallops as a ‘live’ product and detracts from their value in comparison with scallops landed by divers. The initial part of this work has confirmed the considerable extent of grit contamination of commercially harvested scallops and that it is effectively removed in the production of a processed product by shucking and washing the meat, but it has also shown that the eating quality of ‘gritty’ scallops deteriorates rapidly if held unprocessed in the shell.     Blue Whiting Processing Trials Stornaway 1977

    The almost universal adoption of 200 mile fishing limits has resulted, to a large extent, in the exclusion of our distant water fishing fleet from their usual fishing grounds, and consequently in a shortage of traditionally acceptable fish such as cod and haddock. This shortage has caused a predictable series of price increases, and shown a need to exploit non-traditional species such as blue whiting, which can be caught in large quantities around our own coast and within the EEC controlled fishing areas. Blue Whiting (Micromesistius poutassau) is a small white fish, a member of the cod family, which congregates in large quantities to the north west of the UK during its springtime spawning season. Throughout the remainder of the year the blue whiting stock disperses throughout the north Atlantic. Estimates of the stock vary between 8 and 12 million tonnes, of which 2 million tonnes could be harvested annually without damaging the stock. Despite increasing fishing activity by foreign vessels, fishing mainly for fishmeal, the stock still remains virtually unexploited.     Blue Whiting Processing Trials at Stornaway, Spring 1976 (draft only)

    This report describes blue whiting processing trials carried out at Stornoway in the Outer Hebrides in the Spring of 1976. The exercise was a joint project between the Highland and Islands Development Board, Torry Research Station, and the White Fish Authority. The main objective was to test the feasibility of landing blue whiting in fresh condition at a port close to the fishing grounds, processing it for human consumption and supply processors and friers with frozen fillets for trial work and marketing.     Market Test of a Range of Pacific Oyster Products

    Six frozen Pacific oyster products, the most promising of those developed in earlier White Fish Authority trials, were test marketed in two stages in 1974 and 1975 under the brand name, Oyster Bay. It was unfortunate that the timing of the campaign, although logical in the progression of the project, coincided with the onset and early stages of the economic depression, as one of the main reasons put forward for lack of interest by the caterers was that of price. Perhaps the major reason for the disappointing level of acceptability, however, was the overall lack of familiarity with cooked oyster products although it was encouraging to note the response to the products when this was overcome. It was also encouraging to record that fresh oysters in the shell are regarded favourably and until the quantity of UK-grown Pacific oysters increase substantially to bring production costs down in order that the processed products become economically viable, the White Fish Authority recommend that growers concentrate their efforts into stimulating demand for Pacific oysters sold in the shell in local restaurants and hotel, particularly during the holiday season.     Scale Modelling of Trawl Gear

    The relationship between model and full scale results for underwater flexible structures such as nets is far less well understood than for surface vessels. For the latter the empirical formulae developed over many years enable the full scale performance of a vessel to be predicted with a very high level of confidence. Recent work at the SFIA Flume Tank in Hull is promoting a greater understanding of theory for model trawls by comparison with full scale sea trials.     Commercial Development of Marine Fish Farming - Turbot

    Improvements in the controlled hatching of plaice by the Ministry of Agriculture, Fisheries and Food (MAFF), in 1963, provided the opportunity to launch the WFA fish farming R & D programme. Initially work was conducted with plaice (Pleuronectes platessa) at Port Erin, Isle of Man, jointly between MAFF and WFA (Ref 1). A survey of other marine fish likely to become candidates for farming is given in (Ref 2). By the early 70’s it was apparent that plaice farming, although technically feasible, could not be undertaken economically.     The Chief Marine Surveyor (Scotland) of the White Fish Authority approached the Industrial Development Unit, on behalf of the Caley Fisheries Ltd., and Mr Peter Strachan, to carry out an independent investigation into the design and general stability standards of the vessel being built at the Bute Slip Dock under their yard number 485. This action was the result of the loss at sea of the MFV Trident which was built by Bute Slip Dock and which was of a similar design and style to yard No. 485, although it was understood that there were significant differences in hull form between the two vessels.     Trials with Monofilament Longline Gear

    A Cornish cove boat of 6m length was fitted out with 10 Norwegian monofilament lines, a liner hauler and shooting chute. Trials carried out on 19 fishing days allowed the crew to gain expertise in the working of this gear.     Assessment of Blue Whiting Acceptability in Institutions

    These acceptability trials were commenced in September 1975 using blue whiting from the catch off the Artic Privateer which were processed into block fillets in Aberdeen (AIS Report 146). They were continued in 1976 using block fillets processed in Stornoway (AIS Report 171) and extended in 1977 to include single skin-on fillets processed in Stornoway. In each case the blue whiting block fillets were battered and deep fried – the normal method of preparing fish in the hospital or school concerned. Unless specific questions were asked neither the hospital staff nor the school children participating in the trials were informed that the fish species being served to them was blue whiting. The results obtained suggest that provided the fish are suitably size-graded, blue whiting prepared in this way represents an acceptable product to institutional diners who would normally choose fish.     Investigation into Potential Fuel Savings by Using Auxiliary Sail on Existing Fishing Vessels

    The rising cost of fuel which has amounted to almost 700% in the last decade has resulted in a revival of interest in sail power as a means of fishing boat propulsion. This study examines the theory of sail power and its relevance to the modern fishing vessel especially the trawler or trawler/seiner of under 24m in length. The high standards of stability now required for fishing vessels coupled with the hull form developments which have taken place since the advent of the diesel engine preclude the application of sail power to existing vessels. The study develops the formulae for the sail area which can be carried by the modern vessel whilst still remaining within the IMCO criteria and this is so negligible to be not worth the structural changes and expense.     The Comparison of Continuous and Discontinuous Feeding on the Growth of Hatchery Reared Spat of the Pacific Oyster (Crassostrea gigas)

    Six series of trials were held to investigate the effect on growth rate and survival of pacific oyster spat over a five week period when fed under different regimes. It was concluded that there was no effect on mortality but a significant (30%), improvement in growth rate for the same total food consumption, or reduction in food consumption for the same growth.     Scallop Industry in Japan

    The scallop industry in Japan is the most valuable shellfish culture industry at around 34 billion yen production (£68 million). It is second to the oyster industry in terms of production tonnage at 150,000 tons/year as compared to 220,000 tons for the oyster industry. Values of scallop meats remain steady at around £560/ton for in shell and £1,400 ton for shucked meats. The rise in this industry represents one of the most successful examples of the revival and utilisation of a natural marine resource. The scallop under going cultivation in Japan is Patinopecten vessoensis (Jay), “hotategai”, basically a cold water shellfish whose southern limit of distribution is about 35 degrees latitude on the Pacific and Japan sea coast. The main cultivation areas however, are to be found in the north of Honshu and in Hokkaido. This discussion centres on 3 cultivation areas, which in terms of production tonnage are probably the most important scallop growing areas in Japan. These are Mutsu Bay in Komori Prefecture, Funka Bay in S E Hokkaido and Lake Saroma in the north of Hokkaido with the adjoining Okhotak Sea coast. The scallop cultivation technique depends on the relatively simple concept of collecting newly settled stages of the shelled larvae (called ‘spat’) and on growing or raising these juveniles in a protected, maintained environment until they are of a commercial size and can be marketed. Scallop cultivation is one of the relatively new culture processes in Japan with commercially significant tonnages of cultured scallop being produced only in this decade. However, the collection of settled scallop spat on ‘collectors’ and the subsequent sowing of selected juveniles in seabed areas are favourable for their growth, goes back to the 1930’s.     With the number of mobile retailers increasing during the past decade, this project involving the operation of such a unit, was aimed at defining the parameters of van design in relation to different types of market served.     Introduction of the Marine Laboratory Designed 4 Panel Bottom Trawl to the British Distant Water and Inshore Fishing Industries

    Detailed studies of the design, construction and performance of traditional trawls and experiments investigating those factors controlling the geometry of trawls have been made by the staff of the Marine Laboratory, Aberdeen. Techniques allowing observation of the behaviour of fish in these fishing gears have been developed and consequent understanding of the way in which fish are caught has grown over a similar period. The knowledge accumulated from these studies has been applied during the last three years to the development of a family of 4 panel trawls.     Trials of the ABCO Pneumatic Discharger at Fleetwood

    Following the voluntary liquidation of Fleetwood Fishing Vessel owners Association, two new companies, Fish Handling (Fleetwood) Co. Ltd., and Fish Ancillary Equipment Co. Ltd., have been set up to discharge the fishing vessels at Fleetwood. The port has been made more competitive by an agreement with the Dockers union, the TGWU, to cut manning levels and introduce mechanisation. With the assistance of the White Fish Authority the first of a new model ABCO pneumatic discharger has been supplied by its Canadian manufacturers, the Atlantic Bridge Co. Ltd., and the Authority has supervised commercial trials of the discharger at Fleetwood. The trials have compared the performance of the ABCO discharger with the more traditional methods of unloading bulked and boxed fish.     Results and Summary of Conclusions of Interviews Amongst Fish Friers Selling Blue Whiting and their Customers

    Following the experiment amongst 7 volunteer fish friers selling complimentary quantities of frozen, skin-on, blue whiting block or butterfly fillets in their retail fish and chip shops (see report of June 1976), 4 of the nominated friers opted to continue selling blue whiting on a trial commercial basis. Pre-arranged quantities of frozen, graded, skin-on block fillets in 4 kg shatter packs were made available to these friers beginning the week of 16 August, 1976, at a price of £3.50 per stone. To date, the quantities delivered by the White Fish Authority (WFA) average 1 stone per outlet per week for 3 of the fish and chip shops, and 2 stone per week for the remaining 1. After allowing a reasonable amount of time for the novelty aspect to wear off and blue whiting to become an accepted item for sale in the 4 shops, in late October the WFA commissioned interviews to be conducted during normal trading hours in each of the 4 shops. The interviews were conducted by professional interviewers, one of whom spent a day in each location interviewing first the frier and then customers at random who ordered blue whiting.     Consumer Acceptability of Farmed Turbot

    In June 1974 a marine cultivation trial with turbot, at Hunterston in Ayrshire was concluded, as the fish had attained an age of 3 years. The fish in the weight range 0.6 to 1.2kg were harvested and marketed through Grimsby, where they gained favourable comment. Further samples were used to gauge consumer reactions to the farmed product, over and above the very good reports of its eating quality from the authority’s own staff. It has been the Authority’s experience that the view of those with educated palettes often differ from the general public. The Authority therefore commissioned David Elliott and Associates to conduct a consumer survey, across a wide cross section of the fish eating population, to determine whether the farmed product was discernable from wild caught fish of approximately the same age since death and, if so, which was preferred and why.     Over Winter Growth Pecten maximus in a Nursery Scallop

    The concept of an overwinter nursery process for Pecten Maximus spat arose on sampling spat settlement in artificial collectors in 1975 (Ref 1). It was noticed that the major proportion of the collected stock was still small and fragile (mean size 8 – 9mm) about four months after the peak settlement in July. By this time (November/ December) the sea temperature had fallen from 12/13ºC at the end of October to 8/9ºC at the end of December, and eventually the temperature fell to 6ºC by the end of January. There was some evidence of cessation of growth and significant mortalities of the smaller scallop spat over this winter (see Ref 2). There was, therefore, the possibility of promoting growth and survival of these small spat, indoors, over the winter and perhaps thereby shortening the overall culture period for Pecten maximus.     Box Washing and Handling system

    The Aberdeen Fishing Vessel Owners’ Association have, for a number of years, operated a Box Pool within the Port of Aberdeen. The boxes, owned by the Box Pool, were until recently, wooden market trunks, capable of containing 8 stones of fish. They were delivered to the Fish market during the night to meet the estimated demand of the subsequent landing. After the sale, the boxes were taken to the Merchants’ fish-houses from whence they were uplifted by the Box Pool’s own collection service during the afternoon and taken to their premises on Albert quay. Recognising the longer term need to restructure their Box Pool, the A.F.V.O.A. had engaged MAS on several occasions over the past five years to undertake studies concerning the operation of the Pool under different sets of circumstances. A comparative costing exercise covering a number of different washing systems, operated on the continent as well as the UK, resulted in the drawing up of a general specification for a washing machine, which would enable the Box Pool to offer an economical services at their existing site, while producing a thoroughly clean box.     WFA Fisheries Training Centre and Flume Tank Description and Account of its First Period of Operation

    The White Fish Authority’s fisheries training centre was officially opened on the 27 February, 1976 by the, then, fisheries Minister Mr Fred Peart. It introduced a powerful new tool, in the form of a flume tank, in which large scale models of trawls and other types of fishing gear can be demonstrated and tested. Up to the 31st October, 1976, when it was drained for three weeks for its warranty survey, the flume tank had been run for 541 hours on 153 days, with virtually no defects in eight months effective operation. In other words the tank was utilised on all but 22 working days in its first period of operation. This report describes the new training centre, explains how the flume tank works and outlines the type of work done during this first period.     A Study to Forecast Costs of Farming Scallops and Queens

    Biological data, from controlled culture trials with scallops (Pecten maximus) and Queen scallops Chlamys opercularis) on the Scottish west coast, have been applied to Japanese long line methods. Costs have been established and commercial viability is discussed for farming on a crofter basis, that is with a vessel, a vehicle and family labour provided free of charge. Although the early growth rate of Queen scallops is superior to that of scallops, the formers lower sales value cannot yet make its cultivation viable, even on the most favourable basis of allowing all market costs of a combined scallop and Queen operation to be charged against scallop production. However, if the significantly higher inert yield in cultivated Queen Scallops, compared to wild stock, were reflected in the sales value by only 25%, combined culture of the two scallop species would warrant further evaluation.     Over Wintering of Crassostrea gigas Seed at 8 Locations in the UK

    Pacific oyster seed of three size ranges were held in the sea over the winter of 1973/74 at eight locations around the UK. Survival and growth rates at each site were monitored at near monthly intervals. Survival of the smallest size (1.5 to 2.5mm) exceeded 75% at only two locations, both warmer than the other six, and fell below 30% at three locations. Surprisingly the two warmer locations produced poorer results with the medium sized seed (5 to 6mm), with survivals of 25 and 45%, compared to 30 to 50% at the cooler sites. Survivals with the large seed (10 to 12mm) at one warm and one cooler site were 86 and 80% respectively. Significant growth was recorded at only the two warmer locations, being about a 50 fold increase in weight in the heated water at Hinkley Generating Station and 5 to 7 fold at Guernsey. At the other sites growth did not exceed 85% and was zero for several. Until the reasons for the variability in survival of the smaller sizes of seed have been determined, commercial growers are advised to exercise great care if they attempt to overwinter in the sea seed of less than 10mm in size.     Scallop Overgrowing Depth Trial 1979/1982

    The scallops. Pecten maximus (L) and Chlamys opercularis (L) were on grown at four levels in the water column to establish the optimum depth for growth and meat yield. This report gives final data for trials set up using spat collected in 1978. There appeared to be no depth related mortality pattern after the initial stages of cultivation. For optimum growth and meat yield, it is suggested that Pecten should be maintained below 4.5m initially, and then brought nearer the surface as they increase in size.     Conversion of Side Trawlers to Double Beam Trawlers

    British United Trawlers (BUT) Grimsby have requested the Industrial Development Unit, White fish Authority, to conduct a preliminary study into the feasibility of converting a number of their existing middle water side trawlers, which are laid up at present, to double beam trawl operation for high value flat fish. It was suggested the ‘ROSS JUNO’ should be used as the basis ship for the purpose of this study. The results, however, are applicable in general to other similar vessels in the BUT fleet. The most important consideration in the conversion of a side trawler to beam trawling is the effect of the external loads on stability of the vessel. These loads which in themselves may be small are applied at a large distance from the vessels centre of gravity and can result in large applied moments of force.     Testing of Fish Recipes to be Incorporated into a New Recipe Book for Use in the School Meal Service

    The purpose of the investigation was to test the suitability of several recipes for inclusion in a recipe book for school meals. Suitability was measured in terms of plate waste, popularity with children, cost and ease of preparation. The results showed that the more adventurous recipes were more popular with the children than the rather bland traditional fish dishes, and these dishes were also preferred by the kitchen staff. However, it was felt that all the recipes which had been developed showed sufficient potential for inclusion in the recipe book.     Measurement of Cod End Handling Loads on 65-85m Stern Trawlers Engaged in Mackerel Handling

    Load measuring trials on the CORDELLA, a 70m stern trawler, took place during the 1979 – 80 mackerel fishing season. During the 6 day fishing operation, 10 hauls were made with a valid fishing time of 12 hours resulting in a total estimated catch of 294 ton. The maximum, recorded loads taken of both cod end inhauling and cod end tipping are 43 ton and 24 ton respectively. These loads together with the loads obtained on stern trawlers in the 35 – 45 m length range will help to advise the UK Mutual Insurance Co. of revised standards of working gear for these classes of vessel. Each of the 14 hospital regions in England was visited for a one week period. As a result of these visits 722 samples of fish were collected from a total of 371 hospitals and assessed according to the criteria outlined in the WFA/Torry Purchase Specifications.     The Continued Development of a Larval Rearing Technique for Turbot

    Eggs of turbot, Scophthalmus maximus, were transported from the White Fish Authority’s Marine Farming Unit, Hunterston and the Ministry of Agriculture, Fisheries & Food Unit, Lowestoft at the eyed ova stage and hatched in tanks at the Authority’s Marine Farming Unit, Ardtoe. The tanks, with constant illumination and temperature control, were stocked with rotifers, Brachionus plicatilis and algae (mainly Phaeodactylum sp) before the eggs were installed. The larvae were fed successively on rotifers, various stages of the brine shrimp, Artomia salina, and mysid shrimps, Leptomysis gracilis. A total of 1,764 metamorphosed fish were produced, the survival of the best batch of eggs being 1.1%.     Scallop Spat Collection Trials 1981/1982.

    The objectives of the 1981 and 1982 spat collection trials were to obtain further information on the type and deployment of collectors in order to maximise their efficiency. Peak settlement in 1981 occurred in early July for Pecten and Chlamys, with a maximum average yield of 605 and 649 spat per collector respectively. In 1982, the peak of settlement occurred in late June, possibly before the bulk of the collectors were placed in the sea and the maximum yield for Pecten and Chlamys per collector was 451 and 185 respectively. Initial trials using different collector materials were carried out to establish the most cost effective type of bag and filler. These trials will continue.     Interviews with Fish Friers Selling Blue Whiting & Customers

    This report, prepared on behalf of the White Fish Authority (WFA) by David Elliott & Associates, describes the reactions of five fish friers in Wigan, Peterborough and Chatteris (Cambridgeshire), and their customers to block filleted blue whiting. It is the third report covering interviews held with fish friers selling blue whiting, and their customers. The first two reports, issued as TR 137 and TR 146 in 1976, dealt with a situation where frozen block filleted blue whiting was supplied to members of the Executive Council of the National Federation of Fish Friers who had volunteered to sell the fish on the WFA’s behalf. Since these reports were issued, the WFA have continued to sell blue whiting on a low key, but regular and fully commercial basis to a number of outlets – some 30 friers have now tried the fish.     Fish Portion Sizes - Blue Whiting & Chip Shop Interviews

    In the absence of any up to date statistics regarding portion sizes of fish fillets sold in fish and chip shops, the White Fish Authority commissioned a national survey to interview fish friers. 734 fish friers were contacted by telephone during August, 1977, to determine the average portion size of their main selling species. In addition, they were asked questions about skin-on and skin-off fillets, purchases of wet and/or frozen fish, whether they had heard of Blue Whiting and whether they would consider selling it. The specific use of the research was to locate shops selling small portions of frozen, skin-on fish. Following are the results of the research expressed in terms of national finding with various regional distinctions highlighted when significant.     Hall Test Research on Blue Whiting

    Three sets of hall tests were held in February/March 1976, using blue whiting caught by the Artic Privateer in April 1975. In each set, 200 housewives were served samples of both crumbed and pan-fried and of grilled fillets and their responses to the appearance, flavour and texture of the cooked fish obtained.     Water Quality in Purification (Depuration) Systems. Guidance for Purification Plant Operators

    Only ‘clean seawater’ should be used in the depuration system. Cefas has issued advice on water quality in terms of turbidity and microbiology. The seawater used should carry no risk of contaminating the shellfish (including the risk from ‘harmful substances’ or toxic marine plankton).     Commercial Development of Marine Fish Farming - Dover Sole

    This study has been carried out to provide guidance in the formulation of future marine farming Research and Development programmes. The requirement was to produce forecasts of the likely costs of farming marine whitefish commercially, using the best data available at the end of 1975 season. The information presented in this report must be read in this light and not, until certain further results have been established and the trials scale expanded, be taken as an investment guide. Two species, Dover sole and turbot are considered. Only outline technical data, sufficient for understanding the basis of the study, are given with the full background material being presented in separate reports. (Refs 1 and 2).     Development of a Breaded Seafood Product - Seafood Platter

    This is the second in a series of reports covering product development and marketing work carried out by the White Fish Authority as part of its overall programme for expanding the market for under-utilised shellfish species. The work was carried out under a joint contract by a well known shellfish processing company in order to develop a range of sophisticated and up-market products based on cockles and mussels. A wide range of products was developed, a small number of which were extensively researched and consumer tested, and this report is concerned with the first of these products, a frozen breaded mixture of various shellfish and pieces of white fish called “Seafood Platter”.
