    Norovirus and Bivalve Molluscs

Noroviruses are a group of viruses that are the most common cause of gastroenteritis or stomach bugs, often referred to as the ‘winter vomiting virus’. Food borne transmission via bivalve shellfish (mainly contaminated raw oysters) is one (but the least likely) way of contracting norovirus. The number of people in the UK who contract norovirus from eating live bivalve molluscs is very small and numbers are not increasing. This fact sheet looks specifically at the harvesting of live bivalve molluscs, routes of norovirus contamination and treatment options available to reduce contamination levels.

    Kilkeel Fishmarket Extension

The Northern Ireland Fishing Harbour Authority (NIFHA) is currently committed to a programme of harbour works at Kilkeel that involve the extension of quay walls and the market building to improve the operations of unloading, sale and lay-by berthing of boats. Seafish were requested by the NIFHA to advise upon the structure and configuration of the proposed extension to the existing market in light of the proposed EC Hygiene Regulations. Kilkeel is the largest port on the Co Down Coast and supports a fleet of some 114 vessels in excess of 10m registered length. The value of landings is about £7 million (1988) with nephrops, cod and whiting being the predominant species. This report provides a little background of the intended regulations and of local operational practice, and makes detailed recommendations relating to the hygienic design and construction of the building. It makes specific recommendation for a secure, chilled section of the market for prawn (nephrops) sales. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. In cases where this affects the technical content, a paper copy of the original report can still be obtained from Seafish.

    North West Regional Study

This report provides an overview of the fishing industry from the Scottish border in the Solway firth to the Dee Estuary and the border with Wales. The fleet comprises trawlers of up to 18m. and inshore vessels down to 6m. but other harvesting methods include tractor drawn shrimp trawls and the collection of molluscs by hand. The trawl fishery is suffering from the international overfishing of the North Irish Sea. Inshore fishermen and others attempt to meet EC inspired fish hygiene directives. Fleetwood is in serious decline as a fishing port but local fish merchants still handle considerable quantities of fish, most of which is trucked in. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. In cases where this affects the technical content, a paper copy of the original report can still be obtained from Seafish.

Working towards better water quality in partnership with aquaculture

Shellfish harvesting areas are classified as ‘A’, ‘B’ and ‘C’ depending on the level of E.coli found in the shellfish. Category ‘A’ production areas can go straight to market without any treatment. Shellfish from category ‘B’ harvesting areas need to be Depurated or relayed. Category ‘C’ shellfish have to be heat treated. This paper shows the elevation of E.coli associated with cattle having access to water courses. Remedial action by restricting assess by adequate fencing and control of these animals reduces the microbial burden on shellfish production areas. Bivalve mollusc, shellfish, cattle, E.coli, sensitive farming, Slurry, Classification, production areas, pacific oyster, Feeder streams, polluting, coastal, water, Electric Fence, Excluded, Shellfish farm.

    FS3-02.08-Fillet discolouration

Whitefish flesh naturally changes colour with age and depending on how it has been handled after capture. Initially, whitefish species such as cod and haddock have a blue, translucent colouration, which changes to white after a couple of days. After this the flesh can become yellow and then brown but it is generally considered inedible before it changes into these colours. However there are also other reasons as to why fish flesh can be classed as discoloured. This factsheet provides a very basic summary about the reasons for colour changes in whitefish.

Free of flesh shell - further trials

The findings of previous work to define free of flesh shell showed that whilst many shellfish types could be effectively cleaned some species were both hard to clean and difficult to assess their 'free of flesh' status due to high residual test levels of flesh test parameters within shells. This follow on project builds on the previous work, to help find a way forward in developing an alternative testing protocol based upon the use of a leach methodology and to explore options for a combination cleaning process which can produce FOF shell for difficult to clean shell types such as crab.

    Mussel Purification Commercial Scale Trials

This report describes a series of trials conducted at Monteum Ltd., Shoreham using a modified crustacean holding tank, Mussels were obtained from the Wash and purified using the existing criteria advised by MAFF with the exception that as the trials progressed the number of mussel layers was increased to the maximum of six that the depth of tank allowed. In addition further trials were conducted with increased mussel density in the tank, the use of interleaf boards between layers and purifying mussels in bags. Water temperature, pH and dissolved oxygen were monitored and samples of tank water and mussels, both pre and post purification, were analysed for the bacterium E.coli and Faecal Streptococci. The trial ran from February to April 1987, when trials were curtailed due to the onset of the mussel spawning season, and were concluded during October to November 1987. Turbot Hatchery Production 1981

During 1981 a total of 988,900 day one (dl) turbot larvae commenced rearing at the Hatchery at the Marine Farming Unit, Ardtoe. These comprised of 544,600 larvae from WFA spawning stocks at Ardtoe and Hunterston and 434,400 larvae originating at Scottish Sea Farms Hatchery at South Shian. In addition, a batch of 19,000 turbot/brill hybrid larvae was received from MAFF Lowestoft. Larval rearing methods closely followed those of 1980. The eggs produced at Ardtoe in 1981 (6.5% hatching rate) were of poorer quality than those of 1980 (16% hatching rate). This almost certainly reflected mortalities among proven female spawners between the two seasons. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Alternative Stimulation in Fisheries

The objective of this concerted action is to review current knowledge of fish behaviour and the stimuli to which they react. One aim of the review is to reveal where improvements might be made to current practice in fisheries. Question might be: is there an alternative to heavy ground gears that are thought to damage the sea bed perhaps using sound pulses, electric fields, laser beams or water jets? Why do not all fish small enough pass out through grids and square mesh windows built into codend extensions? It is widely recognized that there is a fund of knowledge about fish behaviour as well as the properties of physical and natural stimuli that is not made use of in applied fishing gear technology.

Initial Trials to Extend the Storage life of Cod and mackerel using Sodium Hypochlorite or Ozone to Treat Ice and Refrigerated Seawater

Despite diminishing fish stocks and the higher prices which can be attained for top quality fish, poor quality fish is still being landed into UK ports. As well as addressing the more traditional handling problems Seafish has identified the use of techniques such as ozonation and chlorination which may enable the improvement of fish quality by reducing the rate of bacterial spoilage. Trials were carried out to determine the effect of sodium hypochlorite and ozone on the quality of cod and mackerel in treated ice or RSW. Holding mackerel in RSW treated with sodium hypochlorite reduced the rate of bacterial spoilage by over 50%; little improvement was seen in the quality of cod.

Trials to determine the nitrogen factor of both UK and Imported fillet and minced cod blocks

A code of Practice on the declaration and labelling of fish content in fishery products was recently drawn up by participants from Industry and Enforcement Agencies. Enforcement officers will use this Code of Practice wherever there is a need to consider the correct declaration of fish content. The Code currently contains interim nitrogen factors for fish ingredient (used to determine fish content) which have been obtained by reducing the available data on nitrogen content of fish straight from the sea by amounts thought to accord with the effect of good manufacturing practice (GMP). There is a need to carry out trials to determine the actual nitrogen content of GMP products to replace these interim values. This report is concerned with trials carried out between December 2001 and September 2003 to determine the nitrogen factor of fish ingredient of double frozen fillet and mince blocks produced under GMP in the UK. Sampling took into account both seasionality and raw-material capture area. In addition, samples were taken at key stages to determine the effect of processing. Trials were also carried out to determine the nitrogen factor of the equivalent single and double frozen blocks imported into the UK from five different countries.

The Effect of Product/Process Variables on the Textural Quality of Formed Fillets and their Market Acceptability

Previous work has shown the technical feasibility of producing formed portions of a variety of accurately controlled sizes and shapes from under-utilised or undervalued white fish species. The process and product were shown to have distinct production and marketing advantages, the tight control of portion weight being particularly advantageous to the catering trade, but there was adverse comment from the trade on the ‘rubbery’ texture of the portions produced. This project was to determine the cause of and to rectify the problem of texture, and to investigate the acceptability to the consumer of portions formed from low cost raw material of various white fish species. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Summary Report on the Problems Faced by the Inshore Shrimp Industry in Complying with European Food Hygiene Legislation

Inshore shrimping is a small, traditional industry now largely dependant on a Dutch export market for brown shrimp but with some local trade in brown and pink shrimp remaining. Uniquely the industry produces a cooked at sea product and it does this in rudimentary conditions often on small, old and poorly equipped vessels. Despite this the industry does not have a history of damaging public health. With increasing concern over food safety, particularly for pre-cooked foods, new hygiene legislation of European origin requires the upgrading of the majority of this industry, although those involved exclusively in small-scale trade within the UK direct to retailers or final consumers or only supplying raw material for further cooking are specifically exempted. Physical upgrading of equipment, rapid chilling after cooking and the use of clean water are required and a microbiological specification for the cooked product must be met. Seafish has been investigating the problems faced by the industry in meeting these requirements, together with possible upgrading solutions. This work had been levy funded. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Review of Fishing Port Development and Proposals

This report is a companion document to Report 268 which is issued as Part I. Here the processing industry and its geographical location is analysed in relation to supplies including imports. The picture emerges that no one region of the UK is wholly self reliant in supplies and processing capacity. The concept of a resource centre is proposed. It concludes that Humberside is the dominant resource centre in the UK because of imports, overland supplies and processing capacity. This position is unlikely to change in the near future. DISCARD STUDY ENGLISH NE COAST 1990/91

Discards of demersal fish are a major concern at the present time in the campaign to conserve fish stocks. Discards are those marine animals and fish which are brought aboard the vessel and then returned to the sea because they are unmarketable or below the legal minimum size. They do not include fish escaping through the meshes of the net during towing or those escaping whilst the net is alongside but still in the water. The discard rates in the past have been alleged to be high but the estimates have so far not been quantified in the English and Welsh fisheries. The Scottish Office (SOAFD) through the Marine Laboratory in Aberdeen, have some data for Scottish vessels but the study described in this report makes the first real estimates for one important fishery – that of the North East Coast of England in ICES Area IVb. Traceability and consumer information under EU fisheries control measures and fish marketing requirements Version 4

European fisheries control measures apply minimum labelling and information requirements throughout the supply chain for certain fisheries and aquaculture products whilst under marketing requirements the consumer and mass caterers must be provided with prescribed catch information. Mass caterers include businesses such as restaurants and takeaways in which food is prepared for consumption by the consumer. The requirements do not apply to all fishery products and some exempted from fisheries control are not exempt under marketing. Under Parts I and II this document provides guidance on which products the traceability and consumer information apply to and what information is required within the supply chain and ultimately for consumers and mass caterers. This document consolidates and updates previous guides on information and traceability requirements in the fisheries control regulation (EC) 1224/2009 and the common organisation of the markets regulation (EU) 1379/2013 into a single guide.

UK Fleet Restructuring Model - Mathematical Aspects

Whilst this report deals exclusively with technical aspects of the current SFIA approach to mathematical modelling of the UK Fishing Fleet, it is important to be aware of some background and justification. Early attempts at fleet modelling by the White Fish Authority led to the formation of the Interdepartmental Fisheries Modelling Group, with members from WFA. MAFF and DAFS. Their objectives were to predict the ‘best’ UK fleet composition required to take allowable catches foreseen under various scenarios of EEC policy and fishery resource conservation. This was first tackled using a linear programming (LP) model designed to allocate the fleet in some optimal way, such as to maximise overall profit whilst satisfying strict physical constraints (species quotas, vessel number, etc). Although LP solutions are often acceptable, the method has its drawbacks in applications such as this one. It invariably produces violent changes in fleet allocation in pursuit of some marginal benefit; it is extremely selective in deciding which parts of the fleet to use, ignoring the rest altogether; finally, it always gives solutions on the very limits of what is feasible. Nevertheless, the LP approach did bring benefits, such as amalgamating detailed data from England, Wales and Scotland. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Multi-Layer Mussel Purification Tank

This report describes the trials which subsequently took place following the design of the stainless steel multi-layer tank by Bead Engineering, to Seafish specification, and its installation at the premises of Heiploeg Lynn. The trials were conducted by Seafish as part of its 1988/89 MAFF Research Commission, Project NBA 16. A total of eighteen purifications were made with the tank using a single initial mix of artificial seawater to which ten percent make-up was added at each use. Bacteriological analysis showed that mussels purified satisfactorily throughout the trials and there was no detrimental effect on mussel storage life. It became clear during the trials that water temperature needed to be kept between 5° and 10°C to ensure satisfactory purification. This makes it essential to house the tank in a building in order to maintain temperature control. Following the first twelve trials the effect of overloading trays/boxes with mussels was investigated and it was possible to establish a safety margin on the nominal load of 15kg per box. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. For a number of years Torbay Council and its partners have been working to put in place an effective plan for the regeneration of the town of Brixham, including the provision of fisheries infrastructures that would ensure the long-term viability of the local fleet and fish-related businesses. Previous studies identified major problems in the port relating to lack of space, poor road access, insufficient parking and inadequate and unhygienic facilities for the landing and sale of fish, its processing and onward distribution. As a first stop to the regeneration of the town, Torbay Development Agency (TDA) is planning a new fish market and landing quay to be built on reclaimed land and for the existing fish market to be upgraded to provide modern hygienic facilities that will accommodate fish processing and storage.

A Further Study of Amendment to the UK Fishing Vessel Licensing System: A Capacity Exchange System

Following the technical assessment of three proposed amendments to the UK fishing vessel licensing system, undertaken by Seafish at the request of MAFF and reported in TR 344, a further scheme for control of fleet capacity through restrictive licensing has been studied. The three amendments originally proposed by the Fisheries departments did not reduce capacity to the MAGP targets. The purpose of the further scheme was to see if a measure could be introduced to reduce capacity still more at the time an owner changes from one vessel to another. This scheme is based on the premise that, in order to introduce a new vessel into the fleet, licences of greater vessel capacity must be surrendered. Capacity is measured in terms of a Vessel Capacity Unit (VCU) formulation (VCU = L*B+0.45Kw), and derogation would be given for the direct replacement of a lost vessel. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Initial Trials to Increase Acoustic Detectability of Drift Nets used in the Albacore Tuna Fishery

The drift net fishery for Albacore tuna (Thunnus alalunga) has been criticised for its alleged by-catch of small cetaceans which include dolphins. If it is possible to make a tuna drift net acoustically very detectable to dolphins then their risk of entanglement in the net is likely to be reduced. At the request of UK fishermen's organisations, Seafish and Loughborough University conducted a joint sea trial in Cornwall to examine some of the practicalities of increasing the acoustic detectability of a tuna drift net. The work concluded that it was possible to achieve an increased acoustic detectability by means of passive reflectors attached to the net, but this was at the expense of an efficient deployment of the nets and was unacceptable to fishermen. Fishing Trials to Evaluate the Use of Square Mesh Selector Panels Fitted to Nephrops Trawls - MFV 'HEATHER SPRIG' (BCK 181) - November/December 1990

The sea trials on the 'HEATHER SPRIG' were to assess the effectiveness of a square mesh window in the extension of a Nephrop dual purpose trawl. 80 mm and 70 mm panels were fitted within the 70 mm diamond mesh and comparisons of discards rates measured using the twin rig trawl technique. Both panels substantially reduced discards of whiting and haddock although latter was not a dominant species during the fishing period. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. An investigation of the potential of the Baader 34 and 182 machines for filleting small gadoids

Large quantities of small haddock and whiting are landed in the UK. There is no efficient filleting machinery currently available for these fish, and the cost of processing them by hand is disproportionately high. Consequently their market value is low, and often they are withdrawn from sale when landings are heavy. The SFIA has been contracted by MAFF to carry out a commercial evaluation of the Baader 34 herring filleting machine, modified for blue whiting, for filleting these fish. The SFIA also undertook to investigate the new Baader 182, a filleting machine being developed for small gadoids from the now discontinued prototype Baader 121 blue whiting filleting machine. Blue whiting is a gadoid and thus is physically more similar to haddock and whiting than herring. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. A study of the probable future fishery usage of the ports of Burghead, Buckie and Macduff

The report identifies the present and probable future usage of the ports of Burghead, Buckie and macduff. Although relatively insignificant in national termsin fish landing these port, provided the bases for a large modern fleet with excellent and well used repair and supply facilities. Burghead is a unique all weather landing place. Motor modernisation facilities recommended for Buckie to support its performance as a shellfish processing centre. This report has been produced from a scanned original and may therefore contain some formatting and other inaccuracies. Discard and Effort Survey: Channel ICES Areas VIId and e 1997/98 First Interim Report February 1998

This report describes the activities of the Seafish discard team during the period July-December 1997. Production of this report fulfills milestone 01/2 (31 January 1998) in the Application for a Research Contract. The project is therefore 3 weeks behind to the original plan as described in this proposal. It is not considered seriously behind schedule. A total of 10 discard trips have been undertaken of which seven have been analysed and presented in this report. These results are discussed together with the planned feasibility study of fishermen sampling their own discards.

The Results of a Water and Effluent Study carried out at Scotprime (Grimsby) in October 1997

In the near future new environmental legislation will add greatly to the cost and difficulty of disposing of waste water. This will present a significant problem to the fish industry. Seafish has commissioned a number of water audits in fish processing companies, looking at water usage and effluent production with a view to minimising both.

Exploratory Fishing Trials for Buccinum undatum around the Island of Barra and South Uist in the Western Isles

This report presents the results of exploratory fishing trips undertaken between Sept 1996 and June 1997 to assess catch rates and composition of whelks (Buccinum undatum and Neptuna antiqua)in locations around the Western Isles. Buccinum was captured routinely at all loctions indicating a widespread occurrence throughout the two survey areas, whereas Neptuna was caught predominantly offshore, in deep water. However, the catch per effort was extremely low, and the areas investigated cannot be regarded as being able to support whelk fisheries. The predominance of animals with large and heavily fouled shells suggests the existence of an ageing population which, probably, would be unable to withstand sustained fishing effort. Furthermore, fishing opportunities would be severely restricted by potential conflict with other fisheries, in terms of seasonal access to grounds.
